Basic Risotto

Serves 4

Ingredients:

1 tbsp. olive oil
1 onion, finely chopped
1 cup Arborio (Italian) rice or short-grain rice
¼ cup white wine
2 cups chicken or vegetable stock
freshly grated Parmesan cheese

Directions:

  1. Heat the Durotherm casserole ( 2-litre or larger) and sauté the onions in the oil over moderate heat.
  2. Add the rice and stir until opaque.
  3. Add the wine and let the alcohol evaporate for a few seconds.
  4. Cover with the stock and bring to the boil.
  5. Stir well to make sure rice is not sticking to the bottom of the pan.
  6. Cover and simmer for 5 minutes on low.
  7. Remove the pan from the heat source.
  8. Transfer the pan to the clip-on serving base and let it sit for 15 minutes.
  9. The rice can remain in the pan without overcooking and will stay hot.
  10. Add cheese, stir and serve.
