The Kuhn Rikon Flame Tamer and Energy Saver captures heat that would otherwise rise up the side of the pan and directs it into the base of the pan, where it is quickly and efficiently absorbed.  It also has the added benefit of protecting your fine stainless steel cookware from scorching by the gas flames.  It is 9" in diameter for added stability and energy efficiency and has a non-stick coating for easy cleaning.
